Phase 1

UX Research

RePhil explores how agentic AI systems can support operational management in independent restaurant groups by investigating the relationship between trust, delegation, and human oversight. The research combines extensive desk research on Agentic AI with a qualitative methodology based on semi-structured interviews involving restaurant owners.
These insights informed the definition of user archetypes, operational workflows, delegation patterns, and the design requirements for trustworthy AI collaboration.

Phase 2

Concept and Development

The project proposes RePhil, an AI-powered collaborative agent designed to assist owners of independent multi-venue restaurant groups with procurement, supplier negotiations, stock replenishment, and cash flow management. Rather than replacing human decision-making, the system introduces progressive delegation based on different levels of trust, making the agent’s reasoning transparent and allowing users to define constraints, intervene when necessary, and gradually increase automation.

User Experience and Application

RePhil offers a unified dashboard and a conversational AI collaborator to manage liquidity, multi‑venue procurement, supplier negotiations, and AI recommendations. Through transparent explanations and gradual, category-based delegation with clear human intervention points, it helps restaurants cut operational complexity while keeping strategic control.
